Slow cooker recipes that survive chaos
I test everything between nursing shifts and three-kid chaos in Denver. If it works when Bennett tries to “help” and Noah actually eats it, it’ll work for you. No fancy stuff, just what I can grab at King Soopers on my way home from Rose Medical. I’ve been cooking this way for three years to keep my family fed. Now I’m finally writing it down.
Bennett calls the crock pot “the robot cook.” No idea why.
This Week’s Rotation
My 6-quart is running overtime. Wednesday’s church potluck at Wellshire Presbyterian, Friday’s movie night, and Noah’s got baseball at Sloans three times this week. Currently making beef stew because he asked for it after practice. Forgot carrots at King Soopers. Doing it without, nobody’s gonna notice.
Went to change Bennett’s diaper mid-prep once, came back and Noah had dumped the entire paprika container in. We ate it anyway. Tasted… interesting.
Dinner just has to happen. My pot roast gets made twice a month because everyone eats it and I don’t have to think. Last count, I’ve made it 47 times in three years. Still tastes good every time.

Mateo nurse, dad, crock pot convert
Part-time ER nurse at Rose Medical, full-time chaos coordinator for three kids. Three years ago my abuela handed me her 1987 Crock-Pot with tape holding the cord together. Changed everything when we were dropping probably four hundred dollars monthly on takeout and I was too tired to function.
Working in healthcare means I see what stress and bad eating habits do to families. I’m not a nutritionist, but I know exhausted parents need real solutions, not lectures. Fifteen-minute morning prep beats drive-thru every time for keeping everyone fed and sane.
Been cooking like this for three years, just never wrote anything down. Rachel kept saying “you should share this stuff” every time someone at church asked for a recipe. Finally listened to her.
My chile verde gets requested more than takeout now. Rachel’s teacher friends at Columbian Elementary keep asking me to bring stuff to their potlucks that’s actually what pushed me to start this blog. Turkey breast for holidays saved Thanksgiving last year, way less stress than a whole bird.
Denver winters mean we need warm food constantly. Pot roast after shoveling the driveway before dinner hits different.
Listen, crock pot cooking isn’t complicated. I use my instant-read thermometer, that’s about it. These recipes survive forgotten ingredients, me working doubles, and nights when I can barely think. Fifteen minutes morning prep, dinner’s done when we get home.
Been testing recipes on Sundays for three years while Pepper camps out hoping someone drops something. If all three kids eat it without Rachel ordering backup pizza, I know it’s a keeper. Got about 60 different recipes on index cards now. Planning to share the best ones here first.
Recipe notes are scribbled on index cards in a drawer. Half say “suficiente” or “se ve bien” because I eyeball most things. If the Wednesday potluck crowd goes for seconds, I know it works. Now I’m putting those cards online so other exhausted parents can use them.
